How to make Mary Berry’s one pot Mediterranean chicken recipe

There is nothing better than roast chicken or Mediterranean food, and you can combine both into an easy yet delicious midweek dinner.

Mary Berry has shared her recipe for “easy peasy one pot chicken” which turns a whole chicken and vegetables into a juicy and rich dish in no time at all.

It takes around 10 to 15 minutes to prepare this dish in one pan before transferring it to slowly roast in the oven, making it the best dinner for when you cannot be bothered cooking for ages.

In her cookbook Make It Easy, Mary wrote: “This is a healthy and hearty all-in-one dish made in a casserole or deep saucepan.

“Removing the backbone of the chicken makes it a spatchcock and makes it easier to arrange in the pot.

Instructions

Preheat the oven to 200C (180C Fan or Gas Mark 6).

Heat the oil in your ovenproof pan on the stove over a high heat. Add the onion, fennel, and pepper then cook for three to four minutes. Make sure to stir regularly.

Add the garlic and cook for 30 seconds, then pour in the white wine and boil until the liquid has reduced by half. Then, add in the chopped tomatoes, sundried tomato paste, and Worcestershire sauce.

While the vegetables are cooking, place the chicken upside down on a board. Remove the backbone by cutting either side of the bone with scissors, Then, turn over and press down on the breastbone to flatten the bird and make it into a spatchcock chicken.

Place the lemon slices and bay leaves on top of the chicken, and then place it breast-side up on top of the vegetables in the pan. Season with salt and pepper and then bring the wine to a boil and cover with a lid to transfer to the oven.

Cook the dish in the preheated oven for around 35 minutes. Then, remove the lid, sprinkle on the paprika, and pour over the honey.

Place the dish back in the oven for 30 more minutes until the chicken is fully cooked and a golden brown colour.

To serve, spoon the vegetables on a hot platter and carve the chicken before arranging the heat on top of the vegetables.

Your tasty chicken dish is now ready to serve.
