Mary Berry’s ‘very best apple dessert cake’ recipe

Notably taking two hours to bake, Mary Berry assured the recipe is “remarkably easy”.

The British baker said: “I’ve been doing this special and remarkably easy recipe for years.”

Not a fan of waste, the apples for this delicious bake can even be “shrivelled ones left in the fruit bowl”.

Mary Berry recommends serving the warming dessert with ice cream or crème fraîche.

If, however, you feel so inclined to have the cake for the morning, you could treat it as a Danish pastry.

To do so, have the chilled apple dessert cake sprinkled with a dusting of icing sugar and pair it with a gorgeous cup of coffee.

  • Deep 20cm loose-bottomed cake tin

Ingredients

  • 225g self-raising flour
  • One level tsp baking powder
  • 225g caster sugar
  • Two large eggs
  • Half tsp almond extract
  • 150g butter, melted
  • 250g cooking apples, peeled and cored
  • 25g flaked almonds

Method

1. Preheat the oven to 160C/fan 140C/gas 3. Lightly grease a deep 20cm loose-bottomed cake tin.

2. Measure the flour, baking powder, sugar, eggs, almond extract and melted butter into a bowl. Mix well until blended, then beat for a minute.

3. Spread half of this mixture in the prepared tin. Thickly slice the apples and lay on top of the mixture in the tin, piling mostly towards the centre.

4. Using two dessert spoons, roughly spoon the remaining mixture over the apples. Make sure that the mixture covers the centre, as it will spread out in the oven.

5. Sprinkle with the flaked almonds. Bake in the preheated oven for one hour 15 minutes, or one hour 30 minutes, until golden and coming away from the sides of the tin.

Then, once baked, you can enjoy the delightful apple-based dessert that is ever so moreish.

Should you wish to save some for another time, once cold, the apple dessert cake can be wrapped up and frozen in the freezer for a maximum of three months.

Then, if you so wish, you can enjoy the apple treat as a mid-morning snack (once defrosted) with a good cup of coffee.

Whether you decide to have the apple-based bake as a dessert or on the brunch menu, it will be enjoyyable either way.
