Mary Berry’s sausage and red pepper hot pot recipe is the perfect cosy week-night dinner

Method

To begin, heat one tablespoon of sunflower oil in a frying pan on a high heat. Add the sausages and cook them until fully browned on all sides, then set them aside.

Chop up the bacon into pieces and fry them in the same pan. Once golden brown and crispy, take them out and set them aside.

Add the vegetables (onion, pepper, carrot and garlic) into the pan and cook for five minutes on a high heat.

Once ready, add in the chicken stock, chopped tomatoes and tomato paste, then season with thyme.

Bring the mixture to a boil, add in the potatoes and season with salt and pepper.

Turn the heat down to a simmer and add back in the sausages and bacon bits. Cover the pan with a lid and then allow the mixture to simmer for around 20 minutes.

After the time is up, remove the lid and continue cooking for another 10 minutes until the meat and vegetables are tender plus the sauce has reduced a little.

Your delicious sausage hot pot is now ready to serve. Mary Berry recommends serving it in a bowl alongside your favourite green vegetable.
