Mary Berry’s French-inspired sausage stew is the perfect cheap and cheerful dinner

There is nothing better than a mouth-watering stew bubbling on the stove to warm yourself up after a wet and dreary day, and can be easy to make with the instructions.

Mary Berry has shared her recipe for a British version of cassoulet, which is a rich and hearty meaty stew which originates from the south of France.

It is the perfect meal when you want something easy that will be loved by all the family, plus everything is cooked in one pan to save you time on the washing up.

Mary first shared this delicious dinner in her cookbook ‘Cook and Share’ where she stated that the secret to making this dish is the chipolata sausages, which release a smoky, sweet and spicy flavour.

She wrote: “Chipolata sausages are often forgotten in favour of fat gourmet sausages, but they are perfect for this recipe as they don’t release too much fat.”

Instructions 

Place your frying pan on the stove and heat one tablespoon of sunflower oil on a high heat. Add the sausages and cook until golden brown. Once cooked, place on a plate and set aside for now.

Add another tablespoon of sunflower oil to the pan and add in the onions, garlic and pepper. Cook for a few minutes then add in the chipotle paste, smoked paprika and tomato puree.

Pour in the white wine and chicken stock, then add the baked beans. Place the sausages back in the pan again.

Cover the pan with a lid and bring the mixture to a boil, then reduce the heat and simmer for around 25 minutes.

Once the time is up, add the tomatoes and continue to cook for a few minutes until they are soft and fully cooked.

Your delicious sausage cassoulet is now ready to serve hot. Serve with mashed or jacket potatoes for best results.
