Jamie Oliver’s ‘indulgent’ chocolate and coffee mug cake recipe uses just five ingredients

There is nothing better than a rich chocolate or coffee cake, and this recipe mixes them together in a mug to make the ultimate dessert.

Baking can sometimes be difficult as you have to measure out too many ingredients, but this easy cake gets rid of all the fuss and stress as it only has five ingredients.

Jamie Oliver has created a simple chocolate coffee mug cake recipe dedicated to his wife Jools Oliver, and explained his secret to a “silky smooth cake” is not difficult at all.

He wrote: “Chocolate and coffee are celebrated all around the Mediterranean and they’re also my wife’s two favourite indulgent pleasures, so why wouldn’t I create possibly one of the most decadent desserts on earth?”

This is perfect to make on a cosy evening as not only is it comforting, but it tastes of “pure happiness” according to Jamie, who first shared the recipe in his cookbook ‘5 Ingredients Medditterian‘.

Instructions 

To begin, preheat the oven to 120C.

Break the chocolate into pieces and then place in a heatproof bowl along with the butter and espresso. If you have it on hand, add a “good pinch” of sea salt to the mixture as well.

Then, place the bowl over a pan over a pan of gently simmering water and let the chocolate slowly melt. Make sure to stir regularly so the mixture does not burn.

While the chocolate is melting, mix the eggs and sugar together until you have a creamy pale mixture which has doubled in size.

Once the chocolate has melted, set it aside to cool down for a few minutes. Then carefully fold the sugar and egg mixture into the chocolate.

Boil the kettle and divide the mixture between six coffee mugs or ramekins, then place on a roasting tray. Carefully pour enough boiling water into the tray so that it reaches halfway up the side of the cups.

Place the tray in the oven and bake for 20 minutes.

Once the cooking time is up, remove from the oven and place the roasting tray on a kitchen counter. Leave the cakes to cool in the water for around two hours.

When the time is up, your mouth-watering chocolate cakes will be ready to serve.

If you have it on hand, shave some extra chocolate on top of the cakes or add a dollop of yoghurt or creme fraiche on top. You can even add some fresh fruit which pairs well with chocolate such as cherries, blood oranges or strawberries.
