How to make Jamie Oliver’s ‘hearty’ sausage pasta

There is nothing better than a rich pasta dish topped with a generous helping of sauce and cheese.

It is the perfect dinner in the wintertime when you are looking for an easy, quick and fulfilling meal to warm you up in the evenings.

This “hearty” sausage pasta dish is packed with “nutritional goodness” according to British cooking legend Jamie Oliver, who has said this dinner contains three of your five a day while still being “absolutely delicious.”

In a recipe video, Jamie said: “This is all about the food that you love made really healthy. We’re gonna do a really gorgeous pasta.

“My sausage and broccoli pasta is very simple and straightforward and this is something my family absolutely love.”

Method

To begin, prepare your vegetables. Chop your broccoli florets up. Peel and slice the garlic and onion, and then set them all aside for now.

Add your sausages and whole chillies to a pan and then place the lid on top. Boil for five minutes.

Once cooked and cool enough to handle, finely chop up the sausages and chilli. Pour one tablespoon of oil into a frying pan and then place the sausages and chilli into the pan. Season with salt and pepper as well.

Fry the sausages and chilli while stirring in the sliced onion. Once the sausages are cooked golden in colour, stir in your garlic. Add in the oregano leaves and cook for around 15 minutes.

Once the vegetables are softened, add in the wine vinegar and pour in the plum tomatoes. Fill half the pan with water and continue to stir until the tomatoes have broken up. 

Simmer for another 15 minutes until your pasta sauce has thickened, then season to your liking.

While the tomato sauce is cooking, make the pasta in a separate pot and also add your broccoli. Follow the packet’s instructions to make the pasta but the broccoli will need at least four minutes to cook.

Drain the pasta and broccoli, but reserve one cup of the pasta water. Toss the pasta, broccoli and pasta water into the tomato sauce.

Grate the parmesan cheese and toss on the top. Reserve a little parmesan to grate on top of each plate, and your delicious yet healthy pasta is ready to serve.
