Chef’s ‘holy grail’ trick for perfect ‘easy-to-peel’ boiled eggs

Perhaps one of the trickiest things about boiled eggs comes when you try to peel them, but a chef says he has a method that guarantees easy-peel eggs every single time. Christopher Kimball is one of the founders of America’s Test Kitchen and Cook’s Country, as well as creating content for his magazine, podcast, TV Show and cooking school 177 Milk Street.

Posting a video to the brand’s TikTok page @177milkstreet he explained that everybody has been peeling eggs the wrong way.

Though he has many years of cooking behind him, chef Christopher happened upon the tip while he was travelling in France – and hasn’t looked back.

He said: “Everybody is wrong about peeling hard-boiled eggs. We discovered while I was in Paris a few weeks ago it has very little to do with the cooking method and has everything to do with how you cool them down.”

The method promises a perfectly “moist” yolk while still being easy to remove the shell from the egg. You just need to make sure you boiled the egg for less than 10 minutes and factor in some cooling time.

In the video, the chef begins by placing three eggs into an already boiling pan of water. Christopher then allows the eggs to boil for almost nine weeks.

“It’s been eight minutes and 40 seconds and that’s just because you want the yolk to be moist,” he explained.

“So, the trick here is a big ice bath for three minutes. Get the inside of the egg to get smaller, pull away from the shell and now it’s going to be easy to peel.”

The chef continued: “There we go, finally the holy grail is boiling them for eight minutes for 40 seconds and put them in a big ice back for three minutes. And every egg, not 80 percent, not 90 percent, every egg is going to be easy to peel.”

His method has been applauded by fans who put the egg trick to the test. One user commented: “I’ve done this method with eggs laid same day, just hours old and it works every time! Awesome!”

How to make easy peel boiled eggs

1. Fill a pan with water and bring it to the boil

2. Add your eggs to the pan of boiling water

3. Allow the eggs to cook in the boiling water for eight minutes and 40 seconds

4. Remote the eggs from the boiling water and place them into a big ice bath

5. Allow the eggs to sit in the cold water for three minutes

6. Remove your eggs from the water and peel
