One of three eateries in a collective that was one of Denver’s hottest restaurant openings of 2023 appears to have ceased operating after just four months.
Thuy by PKR said Monday on Instagram that it is “closed” at 2878 Fairfax St. in Denver’s Park Hill neighborhood. An offshoot of the popular Pho King Rapidos, which is still open at Avanti Food & Beverage, Thuy by PKR was sharing a brick-and-mortar space with Yuan Wonton and Sweets & Sourdough, a delivery-only artisan bakery, that opened in September.
“Closed. Thank you Denver. But our phở lives on at Pho King Rapidos,” the message said.
Both Yuan Wonton, a former food truck, and Sweets & Sourdough are still operating.
Thuy by PKR, owned by couple Long Nguyen and Shauna Seaman, had served its Vietnamese-inspired menu on Thursdays, Fridays and Saturdays. Dishes included the pho banh mi, as well as more family-style Vietnamese meals. The trio of businesses took turns operating in the space.
Thuy by PKR didn’t explain the reason for the closure on Instagram, and the owners didn’t immediately return requests for comment on Monday morning.
