Olive & Finch, the 11-year-old cafe and restaurant from chef Mary Nguyen, will open a new location inside Denver Union Station in early 2025, according to a Wednesday statement.
The company currently operates its original restaurant at 1552 E. 17th Ave., and a second location in Cherry Creek. It also runs Little Finch, a quick-serve outlet at 1490 16th Street Mall.
The Union Station restaurant will take over the 1,879 square-foot space where Snooze A.M. Eatery used to be. Snooze is moving to a larger location inside the building later this year now that Union Station has undergone a major renovation.
Olive & Finch had previously announced that it would also open a restaurant in the Denver Performing Arts Center; that location should also debut next year.
Nguyen, a longtime local chef, began her career at The Beehive and Hapa Sushi before opening her own restaurant, Parallel Seventeen — a Vietnamese and French bistro in Denver in 2005. She opened her first Olive & Finch in 2013 as a more affordable, chef-driven restaurant.
Olive & Finch Union Station will serve breakfast, lunch and dinner, according to a statement. It will also “offer a more robust selection of grab-and-go options than other Olive & Finch locations for travelers, including its own proprietary line of cold-pressed bottled juices, sandwiches, salads and more. The quick-service restaurant will also have a full craft coffee program, a liquor license and an emphasis on fresh-baked savory pastries and sweet treats.”
