How to make Mary Berry’s chicken lasagne 

Ingredients

For the chicken filling:

  • 500g of boneless and skinless chicken
  • 200g of mushrooms
  • 200g of baby spinach
  • 200g of creme fraiche
  • Two large garlic cloves
  • Two teaspoons of cornflour
  • One teaspoon of parsley
  • Half a red chilli
  • Olive oil

For the sauce:

  • 400g (One tin) of chopped tomatoes
  • Two teaspoons of sun-dried tomato paste
  • One teaspoon of thyme
  • Salt and pepper

To assemble:

  • Six sheets of lasagne
  • 240g of grated cheddar cheese

Kitchen equipment you will need:

  • Frying pan
  • Shallow (1.8-litre ovenproof) baking dish

Instructions 

1. To begin, preheat the oven to 200C (180C Fan or Gas 6).

2. Prepare the ingredients Chop up the chicken thighs into slices, crush the garlic, and cut up the mushrooms and chilli into small pieces.

3. In order to make the chicken filling, pour two teaspoons of olive oil into a frying pan and heat up on a high heat.

4. Add in the chicken slices and cook until a golden brown colour, but not fully cooked. Add in the garlic, chilli and mushrooms to cook for around a minute. Also, add in the spinach and continue to cook until wilted.

5. In a small bowl, combine the cornflour with two tablespoons of water. Mix together until smooth.

6. Pour in the creme fraiche and parsley as well as the cornflour mixture into the frying pan. Keep stirring until the chicken mixture has thickened, and then set aside.

7. To make the lasagna sauce, mix together the chopped tomatoes, tomato pasta and thyme in a bowl, Season with salt and pepper and make sure everything is fully stirred.

8. Place the lasagna sheets in a shallow baking dish filled with boiling water for a few minutes to soften the dry pasta sheets. Mary wrote: “Soaking the lasagne sheets in water first ensures they will cook quickly.”

9. Now assemble the lasagna. Spoon in a third of the chicken mixture into the ovenproof dish, and then spoon in the tomato sauce and then three lasagna sheets.

10. Keep repeating these layers until the final layer, then pour both your chicken mixture and tomato sauce on top. There should be a total of three layers of chicken mixture with the tomato sauce and two lasagna sheets.

11. Sprinkle on the grated cheese for the top layer and place your lasanga in the oven and bake for around 35 to 40 minutes until golden brown.

12. Your delicious lasagna is now ready to serve. Mary recommends serving it with salad or your favourite green vegetables.
