Mary Berry’s ‘favourite’ chicken supper is ‘easy’ to make as a midweek dinner recipe

It can be tricky deciding what to make for dinner during the week, but this recipe is perfect for anyone wanting something simple but hearty to eat.

Mary Berry’s Tuscan chicken can serve six people which makes it a great meal for families or anyone wanting to save money by batch cooking.

According to the British chef, this is her favourite go-to meal to make for her family due to how quick it is to put together as everything is cooked in just one pan.

In her cookbook ‘Cook and Share’, Mary said: “Based on a classic, this is one of our favourites for an easy supper.”

This is a fantastic recipe for anyone wanting some home-cooked comfort food that is effortless to put together after a long day at work.

Method

Place the chicken thighs in a large bowl, then add one tablespoon of paprika, and two tablespoons of flour, then season with salt and pepper. Toss everything together to coat.

Add the oil to a large frying pan on high heat, and once the oil is hot then add the chicken. Cook the chicken for four minutes on each side until the skin is brown and crisp, then set aside on a plate.

Add the chopped-up onion and pepper to the unwashed pan, and cook for four minutes on medium heat until the vegetables have softened. Once they are cooked add the garlic and cook for 30 seconds.

Stir in the tomato puree, sun-blushed tomatoes, white wine and stock into the pan and bring it to a boil, then return the chicken to the pan.

Cover the pan with a lid, reduce the heat and simmer the dish for 30 minutes until everything is fully cooked and tender.

Add the cream and spinach to the pan once the time is up and continue to cook until the spinach has wilted. Then remove from the heat, sprinkle on the parmesan and serve.
