Making desserts doesn’t have to be a trial, and when you’re trying to be healthy, it can feel like those two things don’t go hand in hand.
However, one foodie has shared a quick, surefire recipe to satisfy a sweet tooth.
Kristy Cook, the brains behind the blog Little Healthy Life, shared her recipe for a minimal-fuss chocolate mousse that doesn’t compromise on flavour.
Her decadent, creamy mousse can be prepared in just 10 minutes using five ingredients.
She wrote: “Let me tell you, as a busy mom of three who’s juggling work, family, and trying to stay on track with my keto diet, finding a dessert that checks all the boxes—low-carb, gluten-free, keto-friendly, and kid-approved—feels like striking gold!”
In terms of health, Kristy has made a dessert that is low-carb but can also be eaten by anyone on a keto diet or is gluten-free. The cook also declared the pud “kid-approved”, so it is perfect for all the family.
What’s even better is that there is absolutely no baking required; all you’ll need is a fridge.
The recipe promises to save you time when you’re busy with the rest of your life. It’s also full of healthy fats from the cream and cream cheese and can be enjoyed in multiple ways.
She recommended topping it with whipped cream or some berries for some extra flavour. Here is what you’ll need to do.
Chocolate mousse recipe
Ingredients
- 100g 85% dark chocolate, finely chopped
- 375g double cream
- 125g cream cheese, softened
- 50g of sweetener or 113g of maple syrup
- One tsp vanilla extract
Method
Finely chop your dark chocolate and pour warm cream over it to melt. Stir until smooth and set aside to cool.
Beat the cream cheese with the sweetener and vanilla until smooth. Whip in the remaining cream until it thickens, being careful not to make it too stiff.
Gently fold in the melted chocolate until everything is silky smooth.
You can serve this immediately for a soft, creamy texture or chill it in the fridge for a firmer mousse.
