How to make Tilly Ramsay’s 20-minute sausage pasta recipe

The cold January nights are usually a time when people are looking for something full but quick to make, which is why this pasta dish is perfect for dinner.

Tilly Ramsay, the daughter of Gordon Ramsay, has a delicious sausage spaghetti pasta which is perfect if you are looking for something rich and comforting to make. 

It only takes around 20 minutes to cook, making it a quick dinner idea for when you want something easy and homecooked. 

Tilly has shared this mouthwatering recipe with the BBC as well as on Gordon Ramsay’s official website.

Instructions 

To begin, prepare your ingredients. Peel and chop the onion and garlic, then mince the garlic.

Remove the sausage meat from their skin by cutting the skin with a knife and then turning them inside out, then place the meat in a bowl. Wash your hands before and after doing this as you should always wash your hands when handling raw meat.

Zest both lemons using a grater then chop them in half and juice them using a juice squeezer.

Now, it is time to begin cooking. Begin by filling up a saucepan with water, salt the water and then bring it to a boil.

Once the saucepan is cooking, add in the spaghetti. Reduce the heat so it is shimmering and leave it to cook until softened. Follow the pasta packet instructions, but it should take around 11 minutes.

Place a frying pan over medium heat and add a little oil. Once it is hot add your onions, garlic and chilli flakes. Cook until the onions have softened.

Add the sausage meat to the pan and fry until golden brown in colour. According to Gordon, cook it like you are cooking mince and use a spatula to break the meat down as it cooks.

Pour in the chicken stock and allow it to continue to cook until half the liquid has reduced. This will roughly take around six to eight minutes.

Once the stock has reduced, add in the creme fraiche, lemon zest, lemon juice and season with salt and pepper. Cook for two minutes more.

When cooked, drain the pasta and add it to the sausage sauce in the frying pan. Add in oen spoonful of pasta cooking pasta and give it a good stir.

Top with parsley, and your delicious sausage pasta is ready to cook.
