How to make Mary Berry’s ‘comforting’ one-pot sausage stew

Winter is a time when most people are looking for something rich and hearty for dinner to cheer them up during the colder weather.

Mary Berry’s sausage and red pepper hot pot is the perfect dish to warm anyone up, as not only is it delicious and made with simple ingredients, but it is incredibly easy to make.

This quick comfort food recipe was first shared by Mary Berry on her BBC2 television show Simple Comforts and also appears in her cookbook of the same name.

This recipe is a perfect family favourite meal loved by both adults and children alike. Plus, this dinner can help you save time during the week as it is all cooked in one pot while being quick to prepare.

Mary wrote: “Sausages are one of the most comforting meals – choose your favourites for this recipe. This one-pot stew is a complete main course, with a green vegetable if you like, and will keep all the family happy.”

Instructions 

1. To begin, prepare your ingredients. Deseed your red pepper and cut it into large pieces. Slice up your onion, carrots and potatoes and then crush up your garlic clove. Also, chop up your bacon into small pieces.

2. Add oil to your frying pan and place on a high heat. Add the sausages and cook them until coloured and brown on all sides, then set them aside. Then, cook the bacon until crispy and then set that aside for now as well.

3. Place the onion, pepper, carrot and garlic clove into the frying pan and cook for five minutes on high heat.

4. Next, pour in the chicken stock, chopped tomatoes, sun-dried tomato paste and some thyme into the pan. Bring the mixture to a boil and then add your potatoes.

5. Turn the heat down to a simmer once brought to a boil, season with salt and pepper and then add both the bacon and sausages back into the pan.

6. Cover with the lid and let it simmer for around 20 minutes, then remove the lid and continue to let it cook for 10 minutes until both the sausages and vegetables are tender.

7. Your delicious one-pot sausage meal is now ready. Mary recommends serving it alongside your favourite green vegetables for a healthier and tastier dish.
