Easy egg fritter breakfast recipe takes less than 30 minutes

What better way to enjoy a lazy weekend breakfast or brunch than with a delicious egg dish? But if you want to mix things up and try something a little different Australian chef Ayeh has a recipe which she says is one of her all-time favourites.

Ayeh, who shares recipes on her website Cooking With Ayeh and cooking videos on her TikTok page @cookingwithayeh, said: “Weekends are always better with fritters. These are one of my favourite recipes.”

The fritters use courgettes, sweetcorn and red onion for a nutrient-packed egg-based dish which comes with an added punch of flavour.

“This Zucchini Corn Fritters recipe makes a great healthy breakfast or brunch option, which is super fluffy and packed full of flavour,” said Ayeh. The chef added: “They’re also baked rather than being fried and taste just as good.

The recipe uses red onion along with a hint of parmesan for a delicious flavour while a special trick with the courgette gives that extra soft texture. According to Ayeh, the key is to grate your courgette, place it in a clean tea towel, and then squeeze it over a bowl to get rid of extra liquid held in the vegetable before adding it to your fritter mix.

And, to top it off, you can prepare the mixture in less than 10 minutes and cook the fritters in 20 minutes for a speedy dish.

Method

Step one: Begin by grating three courgettes onto a clean tea towel and then set them aside for now.

Step two: In a large bowl mix sweetcorn, red onion, fresh herbs and seasoning (salt and pepper).

Step three: Crack in two eggs and grate some fresh parmesan cheese. Then, mix everything.

Step four: Turn your attention back to the courgette. Hold the tea towel up over a bowl and squeeze the courgette to drain any extra liquid. Now add the courgette to your mix.

Step five: Add in some baking powder and flour to bind everything together.

Step six: Roll your mixture into balls and place onto a baking tray lined with baking paper.

Step seven: Flatten the balls with your fingers and brush the tops with olive oil. Then bake for 20 minutes until they are nice and golden. As an added touch, you can serve your fritters with a yoghurt dip.
