Apple Blossom is still open downtown, but with a new chef

Apple Blossom is back like it never left…because, technically, it never did.

In December, sibling duo Paul and Aileen Reilly announced they were closing their hotel restaurant on the ground floor of the Hyatt Centric Downtown Denver. But while their Beast + Bottle Group, which owns Coperta Italian restaurant in Uptown, is no longer involved in Apple Blossom, the new American spot lives on under the new direction of hotel management.

“Our partnership with Beast + Bottle is something that should be celebrated, and they really did have something beautiful in the market,” said Hyatt Centric Downtown Denver’s assistant general manager Brennan Conant. “While we are departing slightly from the original concept, I think it’s something we were all really proud of, so putting it to bed didn’t seem like the right thing to do.”
