Apple Blossom is back like it never left…because, technically, it never did.
In December, sibling duo Paul and Aileen Reilly announced they were closing their hotel restaurant on the ground floor of the Hyatt Centric Downtown Denver. But while their Beast + Bottle Group, which owns Coperta Italian restaurant in Uptown, is no longer involved in Apple Blossom, the new American spot lives on under the new direction of hotel management.
“Our partnership with Beast + Bottle is something that should be celebrated, and they really did have something beautiful in the market,” said Hyatt Centric Downtown Denver’s assistant general manager Brennan Conant. “While we are departing slightly from the original concept, I think it’s something we were all really proud of, so putting it to bed didn’t seem like the right thing to do.”
Hyatt Centric Downtown Denver chose to keep the Apple Blossom name, but refresh the menu to veer away from its former fine-dining selections. The hotel has also hired new executive chef Adrian Faison, a North Carolina native, who’s added his own Southern twist to dishes, like pork chops, smoked hot wings, blue crab cake and wild boar sausage. “He’s really pushing the bar from what you usually see at a typical hotel restaurant,” Conant said.
Apple Blossom, located at 822 18th St., is also adding brunch events to its weekend itineraries, like drag queen bingo, Taylor Swift vinyl brunches, bottomless brunches and live music.
“We want Apple Blossom to be a place people come to, not just through,” Conant said.
