A simplistic, yet beautiful dish, Jamie Oliver shared his garlic chicken recipe that is meant for two people – but you could adjust the quantity of the ingredients depending on how many servings you would like to make.

Garlic chicken recipe

Ingredients:

  • Four cloves of garlic
  • Two x 150g skinless free-range chicken breasts
  • Half x 700g jar of chickpeas
  • 250g baby spinach
  • One heaped teaspoon sumac
  • Red wine vinegar

Method

1. Peel the garlic cloves and slice lengthways, then place in a large non-stick frying pan on high heat with one tablespoon of olive oil, stirring regularly.

2. Slice each chicken breast lengthways into three strips, then toss with a pinch of sea salt and black pepper.

3. Once the garlic is nicely golden, quickly remove from the pan with a slotted spoon, leaving the flavoured oil behind.

4. Add the chicken to the garlic oil pan and cook for five minutes, or until golden and cooked through, turning regularly.

5. Remove the chicken from the pan and tip in the chickpeas (juices and all).

6. Add the spinach, along with most of the garlic and one tablespoon of red wine vinegar, then toss over the heat until the spinach has wilted and the chickpeas are hot through.

7. Season with salt and pepper, then return the chicken to the pan and finish with the reserved garlic and a generous dusting of sumac.

This garlic chicken would be a great pairing with fluffy couscous, which should be made following pack instructions.

Typically taking around 10 minutes, you could put on the couscous just before starting the garlic chicken recipe and let the couscous sit in its own pan.

The heat given out from the garlic chicken will warm up the couscous when it’s time to serve the meal, so you don’t need to worry about reheating the side dish.
