Mary Berry’s ‘easy’ biscuits recipe she makes with her own grandchildren

There is nothing better than a biscuit to go along with your hot cup of tea on a cold winter day, and you can easily make your own with this simple recipe.

British Bake Off judge and national treasure Mary Berry has shared the four-ingredient biscuit recipe she makes with her grandchildren, in which she makes lots of mini biscuits for them to enjoy.

Mary divides the biscuit dough into three equal parts and then makes mini chocolate chip cookies, lemon biscuits, and almond biscuits. This recipe serves 20 mini-biscuits of each flavour.

It takes less than 30 minutes to prepare and is a very “easy” recipe according to the baker, although the lemon biscuits need to be frozen for a little while. You can either make one of these biscuit flavours in no time or have fun making them all.

How to make Mary Berry’s mini biscuits 

Ingredients

To make the biscuit dough:

  • 175g/6oz of softened butter
  • 175g/6oz of plain flour (plus extra for dusting counters)
  • 75g/2½oz of caster sugar
  • 75g/2½oz of semolina

To make chocolate chip cookies:

  • 50g 1¾ of milk chocolate or plain chocolate chips

To make lemon biscuits:

  • One lemon
  • One or two tablespoons of demerara sugar

To make almond biscuits:

  • One tablespoon of almond extract
  • 40g/1½oz of flaked almonds

Method

To make the biscuit dough:

  1. Preheat the oven to 180C (350F).
  2. Place the butter and sugar into a mixing bowl, and stir until you have a soft and creamy texture. Then slowly stir in the flour and semolina.
  3. Alternatively, place the butter, sugar, flour, and semolina into an electric food mixer and have it mixed until a soft dough has formed.

To make the chocolate biscuits:

  1. Split the dough into three parts.
  2. Knead the chocolate chips into one part of the dough, shape them into balls, and arrange spaces apart on a baking tray.
  3. Press the dough down with the back of a fork to shape the biscuit into disks which should be around five centimetres or two inches in diameter.
  4. Bake in the oven for 10 minutes or until a golden brown colour, and cookies are now ready to serve.
