Yorkshire pudding recipe gives ‘super crisp’ results

Nothing beats homemade Yorkshire puddings when they turn out risen, golden and slightly crisp on top. But with so many recipes out there, it’s hard to know which ones are worth following.

Nigella Lawson has made that much easier with a recommendation for Becky Excell’s gluten-free recipe from her first cookbook, How to Make Anything Gluten Free.

Speaking to Express.co.uk, Becky said: “It’s the best gluten-free Yorkshire pudding recipe out there and many pubs and restaurants use the recipe so that guests can have gluten-free Yorkshires (otherwise we miss out!).

“Off the back of Nigella trying that recipe she called me ’The Queen of Gluten Free’!”

The recipe is a classic for those who rely on the oven for home cooking, but air fryer fans will find a version of the recipe in Becky’s newest book, Gluten Free Air Fryer, which is available to preorder now ahead of its June 6 release.

Method

Preheat your oven to 200C fan/ 220C/425F, then grab a muffin tray and fill each hole with a little over one teaspoon of oil.

According to Becky, the oil tray should be left in the oven for 10 to 15 minutes until the oil is “basically spitting” with heat.

Meanwhile, add the cornflour (or tapioca starch) to a large mixing bowl, then crack in the eggs and whisk together.

Once thoroughly combined, gradually pour in the milk, whisking in between additions. Pour the batter into a large jug to make it easy to pour.

For the best results, the next stage needs to be done very quickly. Carefully remove the muffin tray from the oven and immediately pour batter into each hole until just under three-quarters full.

The batter should sizzle a little as the batter trickles in. When every muffin hole has been finished, quickly put the tray in the oven.

Cook them for around 15 to 20 minutes until golden and risen – but never open the oven door during their bake as this will ruin them.

When the puds are noticeably large and fully risen, they should be cooked. However, it’s best to cook them for a little extra time to crisp up as this will reduce the amount they deflate once out of the oven.

After this, remove them from the oven and serve up immediately with a delicious roast dinner.
