‘Ultimate’ leftover sandwich is golden and crunchy – recipe

Roast dinner is a meal most people have on a Sunday afternoon or evening to end the week.

However, a common problem with roast dinners is people often cook too much which can result in food being chucked away.

To reduce waste and enjoy your leftovers in a new way, Opies has shared a recipe for using up your leftover roast dinner trimmings.

The recipe, which serves two, is called the “Ultimate Leftover Sandwich” and takes just 15 minutes to prepare.

The experts at Opies added: “This sandwich can be totally customised to suit your tastes and leftover availability. For extra flavour spread over some leftover stuffing.”

How to make the “ultimate” leftover sandwich:

Ingredients:

  • 4 thick slices of bread
  • 4 slices of leftover roast meat, beef, pork, lamb
  • 4 slices of Swiss cheese
  • 8 Cocktail Gherkins, sliced in half
  • 2 squeezes of American mustard
  • 2tbsp mayonnaise
  • Thinly sliced red onions
  • Handful of fresh spinach
  • 50g butter, softened
  • 1tsp olive oil

Method:

1. Firstly, take two slices of the bread and spread them generously with the mustard. If you don’t have American mustard, you can use English mustard instead.

Add spinach, red onions, leftover roast meat and then the Swiss cheese and gherkins.

2. Next, spread some of the mayonnaise over the two other slices of bread before sandwiching them together.

3. Get a frying pan that’s big enough to fit the sandwiches in.

Put it on a medium to low heat and add half the butter and olive oil.

4. Add the sandwiches to the pan and cook them until that side is golden and crunchy. Flip them over, add the last of the butter and cook until golden.

5. Serve the sandwiches straight away with extra mustard and mayonnaise.
