Slow cooker Baileys bread and butter pudding recipe – ‘like a big French toast’

The festive season is just around the corner, which means menu planning and food ordering for Christmas day will be at the forefront of people’s minds.

If you’re looking for some inspiration, look no further than the classic winter drink Baileys.

Food creator and recipe book author Nate Anthony, more popularly known as Bored of Lunch, has served an indulgent recipe fit for the dinner table this Christmas.

In a recent TikTok video, Nate unveiled his take on the classic bread and butter pudding.

The comforting dessert is slathered in a Baileys custard and topped with chocolate.

What’s even better is that preparation takes no time at all, and it can all be bunged in a slow cooker.

In his TikTok video, Nate said: “If there’s one pudding you need to try this Christmas it’s this slow cooker Baileys and chocolate bread and butter pudding. It’s kind of like a big French toast with Baileys in it.”

He even dubbed the pudding a “sweet lasagne”. Nate’s video has already been super popular with his followers, racking up over a massive one million views on TikTok.

To recreate Nate’s slow cooker wonder this Christmas, this is what you’ll need.

Slow cooker Baileys bread & butter pudding

Ingredients

  • 400g brioche loaf or leftover bread
  • 75g dark chocolate chips
  • 75g milk chocolate chips chips
  • 4 medium eggs
  • 250ml double cream
  • 200ml whole milk
  • 250ml Baileys
  • 50g caster sugar
  • 50g light brown sugar

Method

Prepare the custard by mixing the eggs, double cream, milk, Baileys, caster sugar and light brown sugar in a stand mixer or with a hand whisk.

Cut your brioche loaf into 1-2cm slices. A whole loaf should give you around 12 slices.

Grease the slow cooker with some unsalted butter, then assemble the pudding.

Take the first half of the loaf and place at the bottom of the slow cooker. Then add some chocolate chips.

Add the rest of the bread on top of the first layer, then pour the custard mixture all over the bread.

Top with more chocolate chips and dust with some light brown sugar. Cook on high for two hours or low for four hours.

Serve with some icing sugar, fresh mint and ice cream.
