Toad-in-a-hole is a traditional British dinner which is easy to make, but Mary Berry has a new twist on this classic dish to make it even tastier.

Mary Berry has come up with a toad-in-a-hole recipe which uses meatballs instead of sausages, which makes this meal even more flavourful, cheesy and comforting.

She first shared this hearty dish in her cookbook ‘Mary Makes It Easy’ as a simple dinner idea, as it only takes 10 minutes to prepare before it cooks in the oven for 25 to 30 minutes.

Mary wrote: “Think of a classic toad in the hole, then replace the sausages with herbed meatballs. You can make it in a small roasting tin but makes a nice change to cook it in a round pan.”

Instructions

To begin, preheat the oven to 240C (220C Fan or Gas Mark 9).

Place the sausage meat, parmesan cheese, mustard and chopped-up spring onions into a bowl, then season with salt and pepper.

Using clean hands, knead the ingredients together, then shape them into 20 equal-sized meatballs and then roll in plain flour to coat them.

To make the batter, place the flour in a bowl and make a well in the centre. Break the eggs into the well and then add a little milk. Whisk the ingredients together and slowly add the rest of the milk until you have a smooth batter.

Add one tablespoon of olive oil into a frying pan or roasting tin and place on the stove. Add the meatballs and cook on a high heat until they are fully browned, then set aside.

Add the remaining oil to the pan and then place the pan in the oven for 10 minutes to heat up.

Once the oil is very hot, carefully take out the oven, pour in the batter and add the meatballs on top.

Bake in the oven for about 25-30 minutes until the batter is well-risen, crispy and golden brown.

Scatter over any remaining cheese once you take it out of the oven, and your tasty meatball toad-in-the-hole is ready to serve.
