Mary Berry shares the recipe to cook ‘super quick’ midweek sausage lasagna

Lasagna is one of Britain’s favourite dinner dishes, but it can be time-consuming to make at home if you do not have the right recipe.

However, Mary Berry has shared her easy recipe which cuts the cooking time of lasagna in half with her “superquick” sausage lasagna which is “perfect for a midweek supper.”

Mary shared this delicious dinner with both the BBC and the Daily Mail where she explained the secret to making lasagna quickly is to change up the sauces and soak the pasta sheets beforehand.

She wrote: “This makes a real change from classic lasagne and is so much quicker: no bechamel sauce, just crème fraîche, and the tomato sauce is not cooked beforehand.

Mary added: “Soaking the sheets of dried lasagne really helps to soften them so that they absorb the sauce better. You could also use fresh sheets of lasagne, in place of dried.”

Instructions 

To begin, preheat the oven to 200C/180C for a fan or Gas Mark 6. Then, grease the ovenproof dish with butter.

Boil the kettle, add the hot water to a bowl and leave the lasagna sheets to soak in the bowl as you prepare the sauces.

To make the sausage lasagna sauce, heat oil in a large frying pan and then add the sausage meat. Cook for five to 10 minutes until the sauce meat is brown and make sure to stir to break up the meat.

Once the sausage meat is cooked, add in the flour, let it cook for one minute, then add the chili, garlic and mushrooms and let them cook for five minutes.

Then, pour in the creme fraiche and add the spinach leaves. Bring the mixture to a boil and allow it to bubble for a few minutes, then season with salt and pepper and set aside for now.

To make the tomato sauce, mix the passata, tomato paste, muscovado sugar, thyme and sage together in a bowl, season well with salt and pepper and set aside for now.

Drain the lasagna sheets and your lasagna is now ready to assemble.

Divide the sausage sauce into three and spoon one-third into the bottom of the oven-proof dish. Spoon one-third of the tomato sauce on top and then arrange the lasagna sheets on top of the tomato sauce.

Repeat this step two more times and then for the final layer, add lasagne sheets and sprinkle grated cheese on top.

Bake in the oven for 30 to 25 minutes until the top of the dish is golden brown and bubbling around the edges.

Take out the oven and your tasty lasagne is now ready to serve.
