Hot Ones-inspired baked chicken wings
Ingredients
Two pounds chicken wings, lollipopped
One tablespoon garlic powder
One tablespoon smoked paprika
One teaspoon kosher salt
Two tablespoons canola oil
A few knobs unsalted butter
Freshly ground black pepper
Hot sauce of choice
Instructions
Preheat the oven to 375˚F (190˚C).
Dry the chicken wings thoroughly and place them in a large bowl. Season the wings with garlic powder, smoked paprika, and salt, then toss to coat evenly.
Heat a large oven-proof sauté pan over medium-high heat and add the oil, allowing it to heat up briefly. Add the seasoned wings and butter to the pan, letting them crisp up for a moment before turning to crisp the other side. Sprinkle with black pepper and toss to coat evenly. Once the edges are mostly crispy and the butter is foaming, transfer the pan to the oven and bake for about 15 minutes, until the wings are golden, crispy, and cooked through to an internal temperature of 165˚F (73˚C).
Transfer the wings to a large bowl, add a few tablespoons of the leftover pan sauce, a few splashes of hot sauce, and a few knobs of butter. Toss until everything melts and forms a glaze and serve.
