A clever home chef has revealed a quick and nutritious method to create a scrumptious tomato soup that doesn’t cut corners on taste.
The culinary mind behind Plates and Plans, Piera Cafolla, has concocted an uncomplicated tomato soup recipe utilising a mere six ingredients.
To boost the health quotient, Piera discloses her secret ingredient used to enhance the protein count.
Earlier in the month, she took to TikTok to show just how easy it is to whip up a delicious soup.
Her secret? Cottage cheese. This inclusion elevates the soup’s protein value to an impressive 22 grams while keeping the calorie count down to only 201 per serving, reports Surrey Live.
The video where Piera shares this trick has taken the internet by storm, amassing over 3.6 million views, with 191,400 likes and hundreds of comments to boot.
One viewer, Lauren, advised taking caution when cooking with cottage cheese, saying: “Keyword, low heat like lower than low or else your cottage cheese will curdle.”
The simple, fuss-free recipe has drawn high praise, with @shazzanim exclaiming: “I made this! It was delicious. Great for getting in the protein.”
Others were quick to express their approval, with Annie posting, “This. This is exactly what I needed,” while Holly said, “Oh my goodness you’re a genius!!!!”
Kirsty agreed: “What a life hack, no chopping needed.”
To recreate Pieras high-protein tomato soup for yourself, all it takes is blending together a few choice ingredients.
Healthy Tomato Soup
Ingredients
- 400g tinned tomatoes
- 300g cottage cheese
- 100g roasted red peppers
- 1 tsp minced garlic
- 1 tsp crushed chillies
- Handful of fresh basil
Method
The recipe is so simple to complete, you’ll need to come armed with a blender or a handheld immersion blender. Place all of the ingredients into your blender, or into a large mixing bowl or sauce pan.
Blitz together until you get a smooth consistency. Once blended, place the soup into a saucepan, cooking it over a low heat, stirring continuously.
Once heated to the desired temperature, remove from heat. Serve in a bowl and enjoy!
