Jamie Oliver’s chocolate cookie recipe is simple to make as it only requires five ingredients you likely already have at home, including rye bread which is added to the batter.

Adding bread to a cookie may seem unusual, but it can help retain moisture which makes them softer, and prevents them from drying out so they will stay fresher for much longer.

It can also add a slightly nutty flavour to the cookies, plus a slight crunch to combat their chewy texture.

Jamie’s recipe takes less than 20 minutes, making these cookies the perfect treat to bake on a lazy weekend afternoon, or when you are looking for a quick way to use up some expiring food.

Method

Preheat the oven to 200C or Gas Mark 6. Line two baking trays with baking paper and grease with olive oil.

Melt the chocolate in a heatproof bowl over a pan of simmering water then remove from the heat and quickly add in the butter, stirring it in until blended.

Place the bread in a food processor and blitz until you have fine crumbs, then add the eggs and sugar to the mixture and blitz again.

When the food processor is still on, pour in the chocolate mixture and blitz again until combined.

Spoon the cookie mix into a large sandwich bag and cut off the corner, then pipe 24 blobs onto the two lined baking trays, making sure each cookie blob is three to four centimetres thick.

Bake for eight to 10 minutes in the oven, then sprinkle with sea salt, and your tasty chocolate cookies are ready to eat.
