Instructions
To begin, thinly slice the courgettes lengthways and cut the chicken into 2.5-centimetre cubes.
Place the chicken cubes in a bowl, then place the courgette strips in a pot of salted boiling water for 30 seconds to blanch them. Drain the pot and set the courgette strips aside to cool.
Next, peel the skin and juice the lemon.
Mix all the marinade ingredients apart from the olive oil in a food processor then loosen and once mixed, make it into a paste by adding a little olive oil.
You can also mix the marinade by hand, but you will need to chop up both the chilli and spring onion then crush the garlic cloves.
Add the marinate to the bowl of chicken cubes and mix well to make sure each piece is evenly coated.
Leave the chicken to marinade for up to an hour.
Once the time is up place the chicken pieces and courgette strips on a skewer.
Grill until fully cooked on a barbecue or oven, making sure to turn regularly. This should only take around five to 15 minutes.
Feel free to cut a piece of chicken open to check that the kebabs are fully cooked.
