Jamie Oliver’s ‘festive turkey’ croque monsieur takes just 20 minutes to make

Few things top the joys of a Christmas feast, but with a tad of creativity, leftovers can become a dish in their own right.

Fortunately, several of Jamie Oliver’s leftover turkey recipes can facilitate that, as they use leftover poultry from your Christmas dinner to create a super-comforting culinary treat.

His turkey croque monsieur is a delectable variation of the French grilled sandwich, which traditionally calls for ham, cheese and Bechamel sauce.

The version on Jamie Oliver’s site calls for high quality turkey, generous amounts of cheese and lashings of butter to round things off.

The cook explains: “This recipe is from Bruno Loubet, chef at his eponymous restaurant Bistro Bruno Loubet, in London’s Clerkenwell.”

Ingredients: 

40 grams unsalted butter

40 grams of plain flour

400 ml milk

Two tablespoons Dijon mustard

100 grams Stilton

Eight slices of white bread

Cranberry sauce

100 grams Gruyère cheese

400 grams of leftover free-range cooked turkey.

Method:

Heat your oven to 22C / gas 7. Melt the butter without browning it, and mix in the flour over low heat. Cook for three minutes, then whisk in cold milk.

Increase heat, simmer briefly, then remove from heat. Mix in mustard and Stilton, season to taste.  

On a flat surface, layer four bread slices with cranberry sauce, Stilton sauce and half the Gruyère. Add turkey, top with remaining slices, and press down. 

Spread tops with leftover sauce and the rest of the Gruyère. Bake until the cheese is bubbly and the sandwiches are golden. Serve with salad.
