Jamie Oliver’s chicken tikka bake is the easiest recipe to prepare in 10 minutes

It can be difficult to decide what to cook for dinner, but this simple chicken traybake is quick and easy while being utterly delicious.

Jamie Oliver’s one-tray chicken tikka bake is a mouthwatering dish made with simple ingredients but the chef has a cooking technique to transform this dinner into something specular.

This chicken has a smoky tangy flavour while still being tender and juicy so is perfect for anyone wanting a hearty meal or a healthier alternative to a takeaway.

What is fantastic about this dinner is that it only takes 10 minutes to prepare as all you have to do is chop up the vegetables and season the chicken before it goes in the oven for one hour.

This is the perfect dish to warm you up on a cold autumn evening after a long day as it is one of the most simple recipes you can make.

Method

To begin, preheat the oven to 180C or Gas Mark 4.

Prepare the vegetables by washing the potatoes and then cutting them into three-centimetre chunks.

Then trim the cauliflower stalk, remove any tough outer leaves then cut the cauliflower into roughly the same size as the potato chunks.

Finely slice the coriander stalks and then place the leaves in a bowl of cold water.

Place the chopped-up vegetables and coriander stalks in a roasting tray, then toss in one tablespoon each of red wine vinegar and olive oil. Season with salt and pepper.

Sit the chicken in the tray and rub the skin all over with the tikka curry paste, making sure to get into all the nooks and crannies of the meat.

Place the chicken directly on the bars of the oven and place the roasting tray directly underneath the chicken to catch all the flavourful juices.

Roast the chicken and vegetables for one hour until everything is fully cooked through and golden. Make sure to remember to turn the vegetables over halfway through the cooking time.

Add the chicken back onto the top of the vegetables and leave to rest for five minutes, then sprinkle over the coriander leaves.

Your tasty roast chicken dish is now ready to serve.
