Instructions

Remove the skin from the chicken and place it in a large non-stick frying pan over medium heat to render and achieve a golden colour, turning occasionally.

Debone the thighs and add them to the pan for extra flavour, then dice the meat into 2cm pieces.

Push the skin and bones to one side of the pan, add the diced meat, and cook for about 5 minutes, or until golden, stirring occasionally.

Once the skin is crispy, remove it from the pan, chop it, and set it aside, discarding the bones.

Meanwhile, cook the noodles in boiling salted water following the instructions on the packet. Slice the sugar snaps lengthways.

After the noodles are soft, drain them, saving a mugful of the cooking water, and rinse them under cold water.

Using scissors, cut the noodles into approximately 8cm lengths.

In the chicken pan, stir in Worcestershire sauce and chilli jam, allowing the jam to melt, then add the sugar snaps and noodles.

Toss everything over the heat for about 2 minutes, adding a splash of the reserved noodle water to loosen the mixture if necessary.

Taste and season with sea salt and black pepper as desired, then serve and sprinkle the reserved crispy chicken skin on top.
