I made delicious ‘soft and chewy’ white chocolate blondies in 25 minutes

Blondies use vanilla extract and brown sugar to get their caramel flavour instead of chocolate and cocoa powder like brownies.

They are almost made in the same way though, and offer a great alternative if you’re looking for something less rich.

With so many recipes online, it can be hard to know which ones are quick and easy so I decided to try out a new recipe which turned out to be the tastiest ever.

Sharing a simple recipe with her almost six million TikTok followers, user @fitwaffle shared her “soft and chewy” blondie recipe.

The video received more than 50,000 likes with people praising how easy the recipe was to follow, so I decided to give it a try.

Ingredients:

170g unsalted, softened

165g light brown sugar

100g granulated sugar

One large egg and one egg yolk

Two teaspoons of vanilla extract

215g plain flour

150g-200g white chocolate chips

Method:

Start by preheating the oven to 180C or 160C and lining a rectangular tin with baking parchment paper.

I started by creaming together the softened butter and both sugars until they were light in colour and fluffy.

I used my electric whisk for this step but a wooden spoon can also be used, it may just take a little longer.

Once light and fluffy, add in the egg and one egg yolk along with the vanilla extract. It’s important to get a good quality vanilla to ensure good taste throughout the blondie.

Whisk the egg into the sugars until it’s even lighter in colour and quite thick in consistency. The TikTok user said making sure it’s thick will help it to set properly.

Next, add in the plain flour before using a wooden spoon or spatula to work it into the mixture. It may take a while but the aim is to create a super thick consistency.

Once the flour has been mixed in, add your desired amount of chocolate chips and spread these throughout the blondie mixture.

Press the mixture into your prepared tin and bake for around 20 minutes, but do keep checking on them. The top should be slightly golden with small cracks running throughout.

Make sure to cool fully in the tin to help them set properly, and for an extra fudge-like texture, place them in the fridge for a while.

I have made many blondie recipes in the last few years and these were not only the easiest to make, but also the most delicious.

They are super sweet so some salt can be added to the mixture to help balance it out but I didn’t add any to mine and they were sublime.

The texture is super fudge-like and the mixture made around 16 squares of blondie, perfect for sharing.
