I made a microwave sticky toffee pudding mug cake in five minutes – recipe

On a cold, wintery evening, there’s nothing better than a warming sticky, sweet treat and this sticky toffee pudding mug cake is just that.

Sweet, sticky, decadent and indulgent, this recipe is everything you want from a pudding and is also super simple to whip up using a mug and a microwave.

Sticky toffee pudding, which is also known as sticky date pudding, is a British dessert which consists of a moist cake with chopped dates and a rich toffee sauce.

This recipe is from BBC Good Food’s senior food editor Anna Glover and can be prepared and cooked in just five minutes.

One large mug cake can serve two but personally, I found it too good to share. I ate mine by itself but it would also taste delicious with a scoop of vanilla ice cream or a spoonful of boozy cream.

Method:

1. Firstly, put the toffee sauce ingredients into a large heatproof mug and cook it on high for 30 seconds. Remove it from the microwave and give it a good stir.

2. Put it back in the microwave for another 30 seconds until the toffee sauce starts to bubble. You may need to put it in for longer depending on your microwave. I put mine in the microwave for another 50 seconds.

3. Once bubbling and hot, remove it from the microwave and carefully pour half of the sauce into another dish.

4. Chop up your dates and add them to the remaining sauce in the mug along with the rest of the sponge ingredients. Stir the mixture well so it’s smooth except for the dates.

5. Cook the mug cake on high for two minutes or until the sponge is risen and springs back when pressed.

6. Slice dip a knife into the mug cake to check it’s cooked and then pour over the remaining toffee sauce.
