Eggs are a great source of protein which makes them a fantastic option for breakfast or brunch.
As well as being packed with vitamins A, D and B12, they can be cooked in a plethora of different ways to suit your tastes.
Some of the most popular egg recipes are scrambled eggs, boiled eggs, fried eggs, poached eggs and the humble omelette.
However, these recipes can quickly get boring and often require a host of other ingredients to make them more exciting.
One recipe I came across recently was a baked egg tortilla. The recipe is customisable and involves adding beaten eggs to the centre of a tortilla and baking it in the oven.
I raided my fridge and decided to add spinach, chopped cooked chicken, cheese and sun-dried tomatoes to my baked egg tortilla but you could add anything you like.
Other flavour combinations include olives, chopped cherry tomatoes, ham, red onion and feta.
You could also use any tortilla you like – flour, corn or a Keto-friendly equivalent.
How to make a baked egg tortilla
Ingredients:
- One large flour tortilla
- Two eggs (beaten)
- Handful of spinach
- 30g cheddar cheese
- 80g chopped chicken breast
- Salt and pepper to season
- Spray oil or one tablespoon of olive oil
- Six sun-dried tomatoes
Method:
1. Preheat your oven to 200C and lightly spray a small baking dish with oil. If you don’t have spray oil, brush olive oil around the dish instead.
2. Place the tortilla into the baking dish so it wraps around the centre of the dish, creating a basket shape.
3. Add the beaten eggs and all of the other ingredients except the cheese. Season to taste.
4. Sprinkle on the cheese and bake for 17 to 20 minutes. It will be ready once the egg is set and the cheese is golden on top.
Serve with salad or enjoy by itself.
