Instructions

Preheat the oven to 180C.

Mash up four overripe bananas with a fork in a large bowl until you have a smooth mixture.

Add the eggs and stir into the mixture with a fork until fully combined.

Slowly sift the self-raising flour into the mixture by adding a little at a time and mixing until you have a loaf batter. Add in the sugar and continue to mix until there are no lumps.

Line a loaf tin with baking paper and pour the banana loaf batter inside.

Cut the last remaining overripe banana in half lengthways and place it on top. Sprinkle more brown sugar on top. The banana will come up caramelised and delicious once cooked.

Bake in the oven for 50 minutes. Prick the toothpick in the middle of the loaf to test if it is fully cooked. If the toothpick comes out wet with batter, it still needs a few minutes in the oven while if it comes out dry, it is ready to take out the oven.

Leave the banana bread to rest on the counter until fully cooled down.

Your delicious banana bread is now ready to serve.
