How to make a Mediterranean chicken traybake: Jamie Oliver’s 5-ingredient recipe

Now that the weather is heating up many people are looking for some tasty and flavourful Mediterranean cuisine to eat, but you can make it at home with the right recipe.

Jamie Oliver’s shawarma chicken traybake has only five ingredients and is incredibly simple to cook as all you need is a baking dish.

It takes around five minutes to prepare this dish and then leave it to slowly roast in the oven for 50 minutes.

Jamie wrote: “There’s something so satisfying about dishes where the oven does all the work. Inspired by flavours from the Levantine coast, the rice and aubergine absorb big flavour from the chicken and spice. “

This recipe serves two people and has a total of 816 calories, meaning it is only 408 calories per serving.

Instructions

To begin, preheat the oven to 200C. Trim the aubergine, half it lengthways, use the tip of the knife to score down the skin and then half the pieces again.

Put the chicken thighs in the baking tray. Pour one tablespoon of olive oil and red wine vinegar (if you have it on hand) on the chicken and toss it to fully coat it, then season with salt and pepper.

Place the baking tray in the oven and roast the chicken for 25 minutes. While the chicken is cooking, finely chop up the fruit and nuts mix.

Boil the kettle and take the chicken out of the oven. Stir in the shawarma paste, basmati rice and half of the fruit and nut mix into the dish, then add 300ml of boiling water.

Return to the oven and bake for a further 25 minutes or until the rice is fully cooked and the chicken pulls easily from the bone.

Fluff up the rice using a york and then sprinkle the remaining fruit and nuts mix over the dish, and your tasty Levantine chicken bake is ready to be served.
