Gluten-free spaghetti recipe is a healthy spin on Passover staple

Easter is this weekend, meaning Passover is right around the corner.

As Passover approaches, you may also soon be busting out any of your unleavened recipes. There’s one spaghetti recipe that is perfect for Passover, especially if you’re also looking for a gluten-free option.

Amy Stopnicki of YorkRegion.com came across the recipe after making gluten-free crepes. It just takes one more step to turn them into pasta noodles. Here’s how to make it:

Instructions

In a bowl, mix together the potato starch, eggs, egg whites and water until combined.

Scoop ¼ cup of the mixture into a lightly greased non-stick frying pan, using a circular motion to even the batter out. It should be thin and runny.

Cook on one side until set, then flip and continue cooking for another few seconds. Remove the crepe, and set it on a plate to cool. Repeat to make more crepes.

Once the crepes are cool, stack them and thinly slice into spaghetti noodles with a sharp knife.
