Giant roast potato recipe is perfect to cook for dad this Father’s Day

Mastering the perfect roast potato is a culinary challenge that many strive to conquer.

The humble spud can make or break a Sunday roast, with the ideal texture crispy on the outside, but fluffy inside. However, one innovative chef’s recipe could take your potatoes to new heights – just in time for Father’s Day.

Surprisingly, the secret lies in super-sizing the spuds. While most of us are familiar with a jacket potato, ‘Max’ suggests these oversized tubers can serve a grander purpose.

“Have you had a giant roast potato?,” Max said, posting to his TikTok account @mealswithmax. “It’s basically like a jacket potato but without the skin so it’s essentially a roast potato, just a massive one.”

To start, Max selects a standard baking potato and peels off its skin. He then plunges it into a pot of boiling water seasoned with what seems to be two cloves of garlic, two sprigs of thyme and a sprig of rosemary.

A pinch of salt is also added, before Max allows the potato to boil for approximately 10 to 15 minutes. He continued: “After about 10 minutes, drain it, let it steam dry and give it a little shake to ruffle up the edges. Go on top with some oil, a bit of salt, whack it into the air fryer or the oven for about half an hour or so, at 200 degrees.”

When the timer’s up, Max claims the giant spud should be golden, crispy and ready to eat. But he didn’t stop there, explaining: “I cooked up some pigs in blankets to go on top, then sliced open the potato, went on top with a whole bunch of butter – nice healthy serving of that.

“…Go on top with some cheese followed by some Maxi’s SPG [salt, pepper, garlic], pigs in blankets, bit of honey, followed by some rosemary and thyme, bit of gravy and it’s done – lovely!”

Max’s culinary sensation swiftly became an online hit, with hordes of fans eager to give it a whirl. One fan exclaimed: “Oh my days, giant roastie, this so needs to be a thing,” while another chimed in: “Do this for the next dinner please.” A third exclaimed: “Looking amazing!”
