Easy pancakes recipe: Jamie Oliver’s one-cup version has multi-use ‘hero batter’

Pancakes with any combination of toppings are an all-time classic breakfast that the whole family loves and looks forward to.

Jamie Oliver makes preparing this beloved dish even easier with his one-cup version, which serves four and uses only six ingredients.

The best thing about this recipe is the “hero batter” can be cooked in four different ways: classic crepes, fluffy American pancakes, waffles or pancake sandwiches.

The chef said: “Super-easy to make and ready in just 15 minutes, these pancakes make the perfect weekend breakfast or brunch.

Instructions

Crack the egg into a large mixing bowl and combine it with the flour, milk, and a pinch of sea salt. Whisk the ingredients until the batter is smooth, then gently fold in the blueberries.

In a large non-stick frying pan, heat ½ a tablespoon of olive oil over medium heat, tilting the pan to spread the oil evenly. Pour a few ladles of batter into the pan, making sure to leave space between each one for spreading. Each ladleful will form one pancake, so you’ll need to cook them in batches.

Cook the pancakes for one to two minutes, until bubbles appear on the surface and the bottoms are golden. Carefully flip them over. Once the pancakes are golden on both sides, transfer them to a plate.

Repeat the process with the remaining batter, adding more oil to the pan as needed.

Serve the pancakes hot, with some yoghurt and fresh berries on top, if desired.
