Cookie bar recipe using up leftover Christmas chocolates is ‘easy and delicious’

According to Jane, when you have lots of leftover chocolates from tubs like Celebrations and Quality Street, the easiest thing to do is to put them all into a bake.

The baker, who shares recipes online, shared this adaptable bake on her blog and recommended using any left chocolates.

If planning on using any caramel ones, it is best to freeze these beforehand to stop them from exploding inside the cookie bar.

This recipe serves 16 people and takes just under two hours from start to finish, a great way to spend some free time between Christmas and New Year’s.

The first step is to gather all of the ingredients and preheat the oven to 190C or 170C Fan.

Ingredients:

275g plain flour

One teaspoon of baking soda

Half a teaspoon of sea salt (optional)

One tablespoon cornflour

115g unsalted butter

55g granulated sugar

135g light brown sugar

One egg

One teaspoon of vanilla extract

100g milk chocolate chips

300-400g chocolate box chocolates

Method:

Once the oven has been turned on, line a 9×9 inch square tin with parchment paper and put it to one side to make the mixture.

Start by whisking the plain flour, baking soda, salt and cornflour together until it is evenly distributed and put the bowl to one side.

Next, melt the butter before adding in the two sugars and whisking until the sugar has dissolved and the mix is nice and smooth.

Jane then said to add in the egg and vanilla before whisking again briefly until all combined.

Add the dry ingredients and chocolate chips into the butter mix and stir with a spatula until fully combined and a thick cookie dough has formed.

Finally, add in all of the chosen chocolates. The baker said she doesn’t chop hers up and instead simply folds them into the mix as best she can.

Next, press the dough into the tin, making sure it is levelled before baking for around 18 to 22 minutes until the top of the cookie looks dry.

Jane recommended letting it cool in the tin for 10 minutes before transferring it to a wire rack to cool fully before enjoying it.

These cookie bars will last in an airtight container for up to five days and can be microwaved before eating to create a gooey middle.
