Chef’s egg mayo sandwich recipe is £3.40 cheaper than M&S’ ‘posh’ version

The egg mayonnaise and watercress sandwich has 51g more filling than its standard £2.65 version.

The ‘posh’ sandwich claims to contain an entire egg with salad cream, mayonnaise, salt and pepper and watercress.

A Marks and Spencer spokesperson said: “Our deep-filled Egg Mayo & Watercress sandwich in our M&S Café has over 150g filling which includes luxurious egg mayonnaise combined with salad cream and chives for a richer flavour.

“Paired with an extra layer of chunky slices of free-range egg, fresh baby watercress, and rocket leaves, the filling sits in between thick slices of soft nine-grain bread.

“This indulgent lunchtime option is proving to be a real customer favourite that can be enjoyed in our Cafés or on the go.”

If M&S’ version is out of your price range, Sophie Nahmad from recipe box, Gousto, has shared her go-to egg mayonnaise sandwich recipe that’s both cheap and delicious.

She said: “There are many ways to make your egg mayo sarnie/sandwich game even more egg-stravagent without breaking the bank.

“First, think about your egg mix. As well as lashings of mayo, perfectly cooked jammy eggs and a good grind of pepper, you could mix in capers or pickled onions for pops of tanginess.

“Next, add a pinch of flavour. I love to add some heat to mine. A splash of hot sauce works really well – Tabasco or Sriracha is perfect. Or if you’re not a spice lover then fresh herbs can elevate a bland mix, dill would be my go-to.

“Texture is also key here. Classic watercress does add a little crunch but if you really want to dial that up, then opt for crispy fried onions, crunchy bacon bits or even, crisps (I’m partial to salt n’ vinegar here).

“Finally, the bread. Pillowy soft white bread is best in my opinion – brioche would be my go-to as it adds a little sweetness.”

Gousto’s curry egg mayonnaise, watercress & poppadom sandwich recipe

Ingredients:

  • Two hard-boiled eggs – £0.20×2
  • Three tbsp mayonnaise – £0.20
  • 5g fresh coriander – £0.06
  • One tbsp curry powder – £0.10
  • One tomato – £0.20
  • ½ cucumber – £0.40
  • Three tbsp mango chutney – £0.15
  • ½ tsp nigella seeds – £0.10
  • 25g watercress – £0.15
  • Lime and coriander poppadom crisps – £0.50
  • Four slices of bread – £0.37

Method:

1. Pick the coriander leaves and put them to one side. Then, chop up the stalks and throw them into a bowl with the mayonnaise and curry powder. Mix the ingredients thoroughly.

2. Next, peel and roughly chop up the hard-boiled eggs and mix them into the mayonnaise. To break up the egg, use the back of a fork.

3. Then, finely slice the cucumber and tomato before grilling the bread on one side. This will stop the bread from going soggy.

4. Now it’s time to assemble your sandwich. Grab a slice of bread, toast side up, and spread a layer of mango chutney on it before adding the sliced tomato, cucumber, watercress and your coriander leaves.

5. Dollop the egg mayonnaise over it and sprinkle it with nigella seeds. Add your crisps then finish with the second slice of bread with the toasted side down.
