Athlete shares 15-minute lunch recipe he makes to stay fit

It’s the time of year when many of us are setting new goals for the year and trying to be a bit healthier following a month of eating and drinking more than usual.

We all know the importance of getting plenty of vitamins and nutrients into our diet – from fruits and vegetables. Not only does eating well boost your energy, but it can help your skin and hair glow while also reducing the risk of serious health problems.

But the reality for many is that thinking about eating a salad can be dull. But healthy eating doesn’t always have to be boring – you can implement more fruit and vegetables into your diet in a fun way.

This lunchtime recipe, created by an athlete, is perfect for those who want to feel full, enjoy a delicious meal, but also get their 5-a-day in. These beef tortilla shells have gone viral on social media – and the best part is that they don’t take long to prepare.

The dish was shared on popular recipe page @on.trac5, run by Christian Petracca. He said: “POV: you have 15 mins for a healthy lunch.”

He demonstrated how he created the colourful treat. First you need to boil some rice, meanwhile add some beef into a pan and cook until brown. Add some chilli beans in too if you wish. This dish also works well if you have leftover chilli con carne or rice in your fridge.

Once they are both nearly done, get a bowl and put a tortilla inside it. Whisk an egg before coating the tortilla with it. Put it the oven for a few minutes until crispy.

Add your rice and beef into the the tortilla shell and sprinkle grated cheese on top. Put it in the over for a few more minutes, until the cheese has melted.

Next, chop up some green pepper, red pepper, and red onion into fine pieces. Then add on top of your shell. If you have a tin of sweetcorn feel free to shake some in.

You can also add jalapeno slices for a spicy kick if you fancy, just do whatever suits you. And there you have it – your tortilla shell is ready to enjoy.
