This recipe is the epitome of comfort food, a warm and soothing hug in a bowl.
As the cold weather sets in, with longer nights and darker evenings, it’s easy to feel miserable.
The recent snow in some parts of the country and Storm Bert hitting at the end of last week have only added to the gloom, and with temperatures expected to drop again this week, all we want to do is snuggle up under the covers.
But there’s one thing that can lift our spirits – hearty, comforting food that warms us from the inside out. Dishes like soups, stews, and pie are perfect at this time of year for helping to lift our spirits, and we’ve got just the recipe for you.
This delicious chicken and stuffing pie has been hailed as the ultimate “cosy comfort food” on TikTok, after it went viral shortly after being posted by a woman named Jess.
What’s more, the recipe uses convenient ingredients like stuffing mix and ready-made pastry to minimize kitchen time, making it ready in under an hour.
Ingredients
- 500g chicken breast, diced
- 1 large white Onion, finely diced
- 40g of Beef Gravy Granules mixed with 700ml of Boiling Water
- 1 tbsp dried thyme
- 1 tbsp onion granules
- 1 x 170g packet of sage and onion stuffing
- 1 tbsp of Worcestershire sauce
- 1 pack of reduced-fat puff pastry (I used 220g of pastry in total for the top)
- 1 Egg, beaten
Method
Start by spraying a pan with cooking spray oil, then add diced onions and a pinch of salt. Cook over medium-high heat for about five minutes, or until the onions are golden and slightly softened.
Next, add the chicken and cook for another five minutes, or until it’s browned. Then, add dried thyme and garlic granules, cooking for two more minutes.
The culinary technique has taken the internet by storm as a food enthusiast shares their pie-making process. After preparing the base ingredients, it’s time to whip up the stuffing using boiling water as directed on the package.
A savoury mix of gravy, Worcestershire sauce, and stuffing is stirred thoroughly in the pan before getting settled in an ovenproof dish. The filling gets a brief respite to cool down before being crowned with puff pastry, which is then artistically brushed with a beaten egg.
The creation is slated to bake at 190c (375f or gas mark 5) for a golden 25 to 30 minutes until achieving a perfectly crispy and golden finish. The recipe video has garnered widespread applause, with commenters salivating over its delectable appearance.
