Pour the flour into a large bowl, and whisk in the yeast and sugar until it’s combined. Make a well in the center, and tip in 200 mL warm water and a large pinch of salt.
Using a wooden spoon, mix together until all the flour has been incorporated into a soft dough. Turn out onto a lightly floured surface and knead for five minutes until smooth. Place back into the bowl, and cover with a clean towel. Let rest for 5 minutes to rise.
Heat the oven to 240 degrees Celsius. Place your tray or pizza stone in the oven while it heats up. After it’s risen, take it out and divide into two balls. Use a rolling pin to roll out one of the balls onto a floured surface into a large circle, then move to a baking sheet.
Scatter on your toppings, and move it to the hot tray in the oven. Bake for 8 to 10 minutes until the cheese is melted and bubbling and the crust is crispy. Remove and repeat with the second dough ball.
