Cottage cheese and chia pudding recipe

Ingredients:

  • 300mls almond or oat milk
  • 50g fat-free cottage cheese
  • 4tbsp chia seeds
  • 75g blueberries
  • 1 – 2tbsp maple syrup or honey
  • 1tsp vanilla extract

Method:  

  • Blend all ingredients, besides the chia seeds and blueberries, until smooth.
  • Taste the blended mixture and adjust; add an additional tablespoon of maple syrup or honey if required.
  • Transfer the blended mixture to a food container or bowl and thoroughly mix in the chia seeds.
  • Refrigerate the mixture overnight. To serve, mix the pudding once more, scoop a serving into a bowl, and top it with the blueberries.
  • This pudding is best enjoyed in the morning for breakfast but can also be eaten as an after-dinner treat.
  • Try eating the pudding with additional fruits for added nutrients and texture.
