Macaroni and cheese is the ultimate comfort dish, but you can make it even creamier, richer and flavourful with one simple change when cooking the pasta.

While everyone has their own twist on this tasty dish, it turns out you can improve macaroni by not boiling the pasta in water – but instead cooking it directly in milk and butter.

Melissa Griffiths, a cookbook author and founder of Bless The Mess has shared that this method makes cooking macaroni much more efficient as you can then use the milk to help make the cheese sauce.

She said: “You don’t need to drain the pasta in this recipe. Cooking the pasta directly in the milk makes it extra creamy, and the sauce sticks to it much better.”

Cooking the macaroni in milk and butter allows the pasta to absorb the flavour of the fats, which enhances the flavour and the scratch from the pasta will also allow the sauce to thicken naturally.

Melissa said: “This one pot macaroni and cheese is so simple that you will wonder why you haven’t always made it this way. Ready in 15 minutes and only one pot to clean – I’m sold!”

How to cook creamier macaroni and cheese 

Ingredients: 

  • 600ml of semi-skinned or full-fat milk
  • 200g of dry elbow macaroni
  • 150g of cheddar cheese
  • Three tablespoons of butter
  • Salt and pepper to taste

Method:

In a large pot, add the milk, butter and macaroni pasta. Cook on a medium heat and bring to a simmer. Reduce the heat if the milk appears to stick to the pan.

Make sure to stir the pasta often and let the mixture simmer until the pasta is fully cooked through, for about 15 to 18 minutes.

Melissa said: “Slow and low is your friend here. If you cook this too fast and hot, the milk will curdle.”

Once the pasta is cooked through, add in the cheese and then season with pepper.

You may wish to add more cheese to the dish depending on how sharp the cheese is. Simply taste, add more cheese or season depending on your preference.

Your creamier macaroni and cheese is now ready to serve and is best dished out as soon as it is ready so it is hot and bubbling.
