Nigella Lawson’s Eton mess recipe is easy and perfect for using up fruit

Nigella Lawson has shared her easy four-ingredient method for making Eton mess.

Nigella said of the recipe: “This recipe uses bottled fresh pomegranate juice to encourage the strawberries to ooze out their fragrant summery juices.

“If you’re making this with out-of-season strawberries, then you stand a chance of using freshly squeezed pomegranate juice, in which case, sprinkle some seeds on top of this voluptuous mound of meringue and berry-spiked cream.”

The recipe has been popular among Nigella’s fans with some fans claiming it’s “so easy”.

How to make Nigella Lawson’s Eton mess

Ingredients

  • 500g strawberries
  • Two teaspoons caster sugar (or vanilla sugar)
  • Two teaspoons pomegranate juice
  • 500ml whipping cream
  • Four small meringue nests (from a packet)

Method

1. Firstly, hull and chop the strawberries into a bowl. Add the sugar and fruit juice and leave them to macerate.

2. Next, whip the cream. Whip it in a large bowl until it’s thick and soft.

3. Crumble the meringues into the cream, leaving bigger chunks for texture.

4. Fold 100g of the strawberries into the cream mixture before adding more of the fruit but not all of it.

5. Divide it into four ramekins or bowls before topping with the remaining strawberries.
