While a hearty fry-up, or beans on toast, are staple weekend brunches, sometimes a lighter dish can be just as appealing.
Nigella Lawson shared her “favourite” way to enjoy Sunday brunch, which can be made for the whole family.
“This weekend breakfast favourite can, frankly, be eaten at any time of the day with equal relish,” the chef promised.
Taken from her Nigella Express cookbook, the culinary expert has created a tasty and quick breakfast option that is super simple to make.
Only requiring a few steps to put together, Nigella shared her green eggs and ham recipe.
Green eggs and ham
Makes: five
Ingredients
75g pesto
One large egg
75g plain flour
150ml semi-skimmed milk
Oil for frying
Five large thin slices of ham
Method
Make a batter
Whisk together the pesto, egg, flour and milk.
Cook
Oil a heavy-based frying pan and place over a medium heat. Ladle in approximately 100ml of the batter, swirling instantly to make a crepe.
Once the top becomes dry and the edges lift away, flick it over with a spatula to cook the other side for about 30 seconds.
Layer the pancakes between pieces of baking parchment as you go, and when you have finished making them, lay a slice of ham on each one and roll them up.
“Or fold into triangles — or however you like!” Nigella said of the crepes and ham, which make the green eggs and ham recipe.
Best served with a beverage of your choice, whether that be coffee, tea, juice (from apple juice to mango juice), or even a glass of milk.
