Method:

First, in a small bowl, combine three tablespoons of mayonnaise, two tablespoons Boursin Truffle cheese and one tablespoon of mild olive oil. Stir until smooth and set aside.

Next, you will need to caramelise the onions. First, thinly slice the white onion.

In a frying pan, heat one tablespoon of mild olive oil over medium heat. Add the sliced onions and simmer until soft and caramelised.

Stir in one tablespoon of Boursin Truffle cheese and set aside.

Next is cooking the burgers. Cook the burger patties as per the instructions on the packaging depending if you are using one or two patties per burger.

Lightly toast the brioche buns on the grill. Spread a generous layer of Boursin Truffle Mayo on the bottom half of each bun.

Add a handful of fresh rocket on top of the mayo. Place the cooked burger patty on top of the rocket.

Add another layer of the Boursin Truffle Mayo in between the two patties and on top. Spoon the caramelised onions over the top burger patty.

Finish with a sprinkle of fresh parsley. Close the burger with the top half of the brioche bun.
