Microwave mashed potatoes are ‘super creamy’ and cook in just 15 minutes

Mashed potatoes are creamy, and soft and taste perfect served with roasted meats and vegetables.

The dish is traditionally made by mashing up boiled or steamed potatoes with milk, butter and seasonings.

There are a plethora of mashed potato variations including cheesy mashed potatoes, mustard mashed potatoes and sweet potato mash.

While mashed potatoes are delicious, they can take a lot of time to prepare which is when microwaving is the answer.

With this in mind, Ashley, the owner of Bright Roots Kitchen, has shared her super simple recipe for making mashed potatoes in the microwave.

Ashley said: “These mashed potatoes are perfect for lazy days! Made from scratch, in a microwave and in no time at all.

“They’re super creamy, fluffy and great for cold weather days.”

How to make microwave mashed potatoes

Ingredients:

  • 2 large potatoes – some of the best varieties for mashing include Maris Piper, Desiree, King Edward and Vivaldi
  • 1 cup milk of your choice
  • 3 tbsp olive oil
  • Salt and pepper to taste

Method:

1. Firstly, use a fork to pierce each potato around 10 times before wrapping them each in a sheet of paper towel.

2. Microwave the potatoes for 10 minutes or on the baked potato setting on your microwave. If the potatoes feel too hard when they come out of the microwave, put them in for a few minutes longer until the skin is soft.

3. Once cooked, allow the baked potatoes to cool for five minutes and microwave the milk for a minute.

4. When the potatoes are cool enough to handle, make a slit with a knife at the ends of each one. Carefully peel the skin off of each one and discard it.

5. Put the peeled potatoes in a bowl and add the milk, seasoning and olive oil.

6. Use a fork or a potato masher to mash and combine the potatoes to your preferred consistency. If the consistency is too thick, add a little more milk.
