We all love eggs in the morning, whether they’re fried, scrambled, poached or boiled.
One method for cooking eggs which has become more popular over the years is baked eggs.
Baked egg recipes often involve baking eggs in a flat-bottomed dish with various accompaniments such as cheese, tomato sauce and vegetables.
This recipe from Maple from Canada serves four, bakes in just 30 minutes and includes a delicious chilli sauce.
How to make maple chilli baked eggs
Ingredients:
For the chilli sauce
- Two green peppers
- Eight green chillies
- 10g coriander
- Two kiwis
- 120ml pure maple syrup (preferably amber syrup for its rich taste)
- One garlic clove
- 13g grated ginger
- Two limes, juiced
For the baked eggs
- Eight eggs
- Two tbsp shaved parmesan
- One red onion, sliced and pan-fried
- One tbsp chopped fresh chives
- Four slices sourdough bread
- Salt and pepper, to taste
Method:
To make the sauce:
1. Firstly, put all the ingredients except the maple syrup into a blender.
2. Put the sauce into a shallow saucepan, add the maple syrup and 100ml of water before bringing to a simmer.
3. Allow the sauce to simmer for around 15 minutes, making sure to stir occasionally until the sauce is glossy.
4. Simmer for another five minutes until it has reduced and coats the back of the spoon. Be careful not to burn it.
5. Pour the sauce into a sterilised jar.
For the baked eggs:
1. Preheat the oven to 180C.
2. Crack two eggs into each of the four ramekins and bake for 12 to 15 minutes until the whites are set and the yolks are still visibly runny.
3. The baked eggs should look slightly underdone as the residual heat will set them further as they cool.
4. Season the eggs with salt and pepper before adding the fried red onion, parmesan and chives.
5. Serve with the green chilli sauce and a slice of buttery toasted sourdough bread.
